It is a busy month for Castle Hills especially around the village shops. Below are some of the months activities.


Did You Know?

While Easter is a very important religious holiday for some people, the Easter Bunny has it's own history.

History.com reports that it was first introduced in the 1700s by German immigrants to Pennsylvania, who reportedly brought over their tradition of an egg-laying hare named "Osterhase" or "Oschter Haws" from the Old Country. Legend has it, the rabbit would lay colorful eggs as gifts to children who were good, so kids would make nests in which the bunny could leave his eggs and even sometimes set out carrots in case the hare got hungry. Castle Hills Parks

Almsbury Park is reopen after getting a facelift. The renovations include new playground equipment, complete with slides, swings, and climbing features, catering to both younger and older children. Additionally, shade structures with accompanying tables and benches, along with fencing, were installed to ensure compliance with the Americans with Disabilities Act at the park.


Clubhouse Update & Membership Information

We are excited to announce the expansion and renovation of the Clubhouse and the improvements to the back of the Club. This project has been in the works to align with our recent growth in membership over the past few years. This $4M investment in your Club, continues to reflect our ownership's commitment to The Lakes at Castle Hills.  We will inform you of the construction process through emails, website, and other social media formats. The project has a target completion date for the end of April 2024.

Corned Beef and Cabbage

This Corned Beef and Cabbage Slow Cooker recipe packs all of the deliciousness of corned beef into a meal that cooks itself.

Ingredients:

  • 1 corned beef brisket 3-4 pounds
  • 1 onion
  • 3 cloves garlic
  • 2 bay leaves
  • 2 ½ – 3 cups water
  • 2 pounds potatoes peeled & quartered
  • 2 large carrots chopped
  • 1 small head of cabbage cut into wedges

Directions:

  • Chop onion into large chunks and place in the bottom of a 6 qt slow cooker. Top with corned beef and seasoning packet.
  • Pour water into slow cooker until it just about covers the corned beef. Add garlic and bay leaves.
  • Cook on low 8-10 hours.
  • After the initial 3 hours, add potatoes and carrots to the slow cooker.
  • Two hours before serving, add cabbage wedges to the slow cooker.
  • Remove corned beef from slow cooker and let rest 15 minutes before slicing. Serve with potatoes, carrots and cabbage.
